Camryn, glad to hear you're enjoying the recipe and exploring sesame seeds! While Kamut is similar to wheat and durum, its higher protein content means it absorbs water differently. Since you're using freshly milled Kamut with all the bran intact, I'd suggest increasing the hydration by about 5-10% initially. Start with the lower increase and adjust based on how the dough feels during mixing and folding.

I’ve made this recipe a couple times and absolutely love it! I’ve even started topping regular loaves with sesame seeds since making this recipe! Have you tried this with 100% Kamut? I recently got ahold of some Kamut berries that I plan to mill. I know that the grains are fairly similar but would the hydration need to be increased since the bran is not going to be sifted out? Thanks!
